Heart Shaped Pop Tart Recipe

Heart Shaped Pop Tart Recipe (Fresh, Homemade & Kid-Approved)

There’s something extra special about baking homemade treats that look adorable and taste better than anything store-bought. These heart shaped pop tarts are flaky, lightly sweet, filled with real strawberries, and finished with a simple lemon-kissed frosting and festive heart sprinkles.

Unlike packaged pop tarts, these taste fresh, buttery, and not overly sweet. My boys absolutely loved them, and I loved knowing exactly what went into them. If you’re looking for a fun baking project for Valentine’s Day, birthdays, or just a cozy weekend treat, this recipe is a winner.

Why You’ll Love These Heart Shaped Pop Tarts

These heart shaped pop tarts are made with simple pantry ingredients and no artificial flavors or dyes. The strawberry filling is naturally sweetened and tastes bright and fresh, not processed. The heart shape makes them fun and kid-friendly, and the homemade pastry gives them a flaky, bakery-style texture you just don’t get from store-bought versions.

They’re nostalgic, cozy, and perfect for making memories in the kitchen.

Ingredients You’ll Need

For the homemade pop tart dough:

2 cups all-purpose flour
1 cup (2 sticks) cold butter, cubed
½ teaspoon salt
1 tablespoon sugar
¼–½ cup cold water

For the strawberry filling:

1 cup strawberries (fresh or frozen), finely chopped
1–2 tablespoons honey, to taste
1 teaspoon lemon juice

For the lemon vanilla frosting:

1 cup powdered sugar
1–2 tablespoons milk or water
½ teaspoon vanilla extract
Fresh lemon juice, a small squeeze

For decorating:

White and red heart-shaped sprinkles

How to Make Heart Shaped Pop Tarts

Make the Dough

In a large bowl, mix the flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs with pea-sized pieces of butter throughout.

Slowly add cold water, mixing just until the dough comes together. Divide the dough into two discs, wrap, and refrigerate for at least 30 minutes. Chilling the dough helps create a flaky pastry and makes it easier to work with.

Prepare the Strawberry Filling

In a small saucepan, combine the chopped strawberries, honey, and lemon juice. Simmer over low heat, stirring occasionally, until the mixture thickens into a jam-like consistency. This usually takes about 8 to 10 minutes.

Remove from heat and let the filling cool completely before assembling the pop tarts.

Cut the Heart Shapes

Roll the chilled dough out on a lightly floured surface until it is about ⅛ inch thick. Using a heart-shaped cookie cutter, cut out an even number of hearts.

I used a red heart-shaped cookie cutter, which made this step extra fun and festive.

Assemble the Pop Tarts

Place half of the heart shapes on a parchment-lined baking sheet. Spoon about one tablespoon of the strawberry filling into the center of each heart, leaving space around the edges.

Lightly brush the edges with water, place another heart on top, and gently press to seal. Use a fork to crimp the edges.

Place the assembled pop tarts in the refrigerator for 15 minutes before baking. This helps them hold their shape and bake evenly.

Bake

Bake the pop tarts at 375°F (190°C) for 20 to 25 minutes, or until they are lightly golden. Remove from the oven and let them cool completely before frosting.

Lemon Vanilla Frosting

In a bowl, whisk together the powdered sugar, vanilla extract, and milk or water until smooth. Add a small squeeze of fresh lemon juice to taste. The lemon adds a subtle brightness that balances the sweetness of the frosting without overpowering it.

Spread the frosting over the cooled pop tarts.

Decorating with Heart Sprinkles

While the frosting is still wet, decorate with white and red heart-shaped sprinkles. This simple step makes them feel extra special and perfect for kids.

What My Kids Thought

My boys really loved these heart shaped pop tarts. They said they tasted fresh and kept asking for more. Unlike store-bought versions, these weren’t overly sweet or artificial-tasting, and they felt like a treat without feeling heavy.

Tips for the Best Homemade Pop Tarts

Keep your butter cold for a flaky pastry texture.
Don’t overfill the pop tarts or the filling may leak out.
Always frost once the pop tarts are completely cooled.
Store leftovers in an airtight container for best freshness.

Final Thoughts

These heart shaped pop tarts are proof that homemade treats don’t have to be complicated to be special. They’re nostalgic, cozy, and made with real ingredients, which makes them perfect for baking with kids or surprising your family with something homemade and thoughtful.

Whether you make them for Valentine’s Day or just because, these fresh, homemade pop tarts are sure to become a favorite.
